Chef Thomas Farmer’s Market Report:

This week was a great week at the farmers market! I started my Saturday morning at 7.30 am at Morningside Farmer’s Market in Virginia Highlands. I was greeted by Nicholas the farmer at Crystal Organic where I pick up the most amazing yellow and red tomato with a pointed end and with the most succulent and sweet flavor. I know this will go great with our Local tomato and Mozzarella Salad! I also pick up some tri colored baby potatoes that I use for my Boulangere potatoes on the menu. Great visual presentation combined with amazing flavor. Like I always say, “When you start with high quality product, it is easy to make great dishes.” At Morningside I also picked up some sweet peppers and squash from Mary Denton.

After that I headed to the Peachtree Road Farmer’s Market, my home away from home.  Here I visited with my regulars, Indian Ridge, Hidden Springs, Fairywood, Costas Pasta, Sundog Farm, Flat Creek Lodge, and many more. What’s so great about Peachtree Road Farms Market is the diversity here – you can get anything from produce to meat, seafood, pottery and much more.  At the end of my morning I headed back to the hotel with my car full of local sustainable products ready to create some magic in the kitchen!

Chef Thomas McKeown’s Recipe for Italian Bread Salad

Terrace’s own Chef Thomas McKeown gave a cooking demonstration of  favorites like the Italian Bread Salad, Savory Bread Pudding and Local Mushroom Fondue with Roasted Garlic Crostini. The crowd loved his demo and couldn’t get enough of the food!!! Chef Thomas shares his recipe below for the Italian Bread Salad. Enjoy!

Ingredients:

Cherry tomatoes, red and yellow, cut in half — 1 pint

Cucumber, peeled and diced — 1 ea

Red onion, thinly sliced — 1 ea

Samt and pepper — to taste

Basil, Chiffonade — 3 tbsp

Extra Virgin Olive oil — 3 tbsp

Balsamic vinegar — 2 tbsp

Garlic, minced — 1 tsp

Bocconcini Mozzarella, cut in half — 1/4 lb

Magnolia Bread loaf cut into 1″ cubes (Olive is my favorite) — 1/2 loaf

Balsamic reduction — 1 tbsp

Instructions:

1. Place the tomatoes, cucumber, red onion and basil in a bowl. Season with salt and pepper. Add the garlic, basil, olive oil and vinegar and allow to stand for 9-10 minutes.

2. Add the mozzarella and bread and allow to soak for 40-50 minutes before serving.

3. To serve, place in a large serving bowl and drizzle with Balsamic reduction and fresh basil. Serve immediately.

Chef tips:

1. To make Balsamic reduction, place 1 cup of Balsamic vinegar and 1 tbsp of sugar in a pot. Bring to a boil and cook until it reaches 227 degrees F. Place in a cup and allow to cool.

2. Salad can utilize any seasonal greens or vegetables.

Introducing Chef Thomas McKeown to the Atlanta Scene

Terrace and The Ellis Hotel are happy to have Chef Thomas McKeown as part of our team! Responsible for the culinary success of Terrace, while creating an upscale dining experience for hotel guests, area visitors and Atlanta residents, Chef Thomas was born and raised in Ireland and brings an Irish perspective to his culinary approach.  He has spent the last five years finessing his culinary experience while studying and working in the states and settling down with his wife who is also a chef in Atlanta.

The Very Special Cheese Board at Terrace

Executive Chef Thomas McKeown has added a very special cheese board to the Lobby Bar menu and Terrace…the cheese board.

With imported cheeses from France including brie, blue cheese and feta, the regional honeycomb from Savannah Bee Company in Savannah, GA adds an unusual and delicious balance to the varying tastes of the cheeses as it is topped with local micro greens.

Accompanied with a fig reserve also from Savannah, GA by a company named Braswell Select, the contrast in taste is superb.  Sprinkled with spiced pecans and capped with a red wine reduction, the cheese board is a treat for anyone enjoying wine, cocktails or a prelude to dinner.
